To think what this cafe is named after is easy because there is a square nearby called Place du Chatelet.  But a little research taught me more than that.

Place du Chatelet was named after the Grand Chatelet, which was a castle demolished by Napoleon in 1802.  Chatelet is a medieval term in French for a small castle that overlooks a bridge or defile -- in this case the fort over the northern approach to the old Pont au Change over the Seine river to the Ile de la Cite (Source: Wikipedia).
